If you click on a contact in the trash, you will immediately see the option to restore the contact.

The same end date applies here as for the web application of contacts. So if contact is still in the trash after 30 days, it will be automatically deleted. So don’t see it as an archive to store your old contacts; after all, you run the risk of permanently losing (important) old contacts.
